I would like to add a custom field in the log work screen.
Alternatively, I want the user (not customer) to populate a field everytime they work on a ticket. This field must be invisible to the customer but viewable internally - similar to the time logged field. I would like to pull the values in a report for every ticket since there can be multiple entries per ticket (based on number of users who update the ticket).

It's not possible to customize built-in log work feature, but you can create a global workflow transition and add custom field to it. It will allow you to create a custom field, but the field will be in scope of issue.
If you want to have a log-work-scoped custom field you shall use paid separately app called tempo timesheets and its feature called worklog attributes. It has been described here
