Change of default language does not work. I want to change it to English and in help, it says where to go. I went there. It is already English but the language is still Danish. Furthermore, it says (in Danish) that this feature is currently not availablef: "Denne funktion er i øjeblikket under udvikling."
What is going on?
What I did to finally get around this.
1. check with another browser to see that it is specifically Chrome.
2. use validator.w3.org/i18n-checker/ to see what the "acceptor language" is. Just specify google.com or any other site. It just shows how that site sees you--language-wise
3. follow the steps here to manually modify your chrome preferences file. Note: you must follow the steps as given and feel comfortable editing systems files.

Is your browser set to Danish as language? Try to change it there to English also.

I did that without joy.
Then I logged in using Safari and found language was English. Turns out the Chrome preferences file can get stuck and needs to be overwritten manually. It is also related to Chrome Sync with Google account.
Not a good idea for Atlassian to use default browser language as overall language setting.

See my answer on workaround below. This is a known issue with Chrome. Perhaps you are working on a better solution than adopting Chrome default language. (FWIW, relying on Chrome defaults potentially introduces annoyances for users crossing borders. I just wanted to use the trial period to test drive this version and spent my time on this issue instead. I have used Jira before but the additional features have added variation (the twin brother of Chaos) and reduced intuitiveness.)

Its not only Chrome, I have the same issue with the desktop version, my Windows is set to NZ English, and I want to set trello to US english. Cant. Also doesn't work in Firefox - seems to do no spell check at all.
BUT - most products have an internal language choice option, this would be much better than trying to fiddle with device settings; make it independent of platform please.

I'm not as familiar with Trello, but in the Atlassian Cloud suite, if the individual user hasn't set their own language, then it will use the browser default.
I don't believe the original issue here with Jira Service Desk Cloud is the same as the one you're encountering, so I would recommend that you raise a question in our Trello collection so our Trello Community can help you out with that.
