I need to reassign the Administrator of our Jira Service Desk. The current administrator has left the company.

I see that you are the site-admin of the instance, so in order to change an administrator of a project, you also need the group Administrators in your profile.
So please, go to Administration and if you don't have this group, please add it.
Then, you need to go to the Service Desk project > Project settings > People > Add people > Find the user > Select the role Administrators > Add.
If that's not the case, please give us more details about where this administrator was added and from what page you need to remove them.
