Originally the Customer Portal contained a drop down list with all the request types in it. Something happened where now instead of the drop down list it just lists out all of the Request types.
How do I change it back so the Request Types are back into a drop down list?

I think you turned on the New Help Centre which Jira will be making the new Customer Portal experience live by the 26th of February.
Just go customize your portal and then deactivate the New Experience by toggling the boolean as per my screenshot :)
