I have a problem with taking away jira field for creating a ticket, this does so that no email gets through and in to jira..
In ->Field Configuration Schemes i can customize required fields, hide, show and so on, but i can NOT change the issues type.

In Jira Service Desk, Request name is tied to Issue type. Users cannot change the issue type while creating an issue (unless if you have a custom field similar to Issue Type).
That being said, Issue type in JIRA is a system mandatory field, we cannot make it optional. If you are not receiving email for particular request type, check Email Requests option under Project settings
You can also check the mail audit logs for the specific Email request. Go to Applications > Jira Service Desk > Email request
