Hi, I am developing a JIRA Service Desk booking workflow where, say 14 days before a due date, the issue will transition automatically to a new status. I have scriptrunner, but am not sure how to achieve this.

You can achieve this with Scriptrunner Escalation services
That will check issues on schedule.
