How can a customer see who is assigned to the request i the portal?
I cant find any way to change the right column in the customer view.

Natively, you cannot 'add' this information to the ticket. There's official feature suggestion related to this: JSDCLOUD-328: Allow Assignee to be Shown on Customer Portal
As for alternatives, I'd suggest checking workaround section of linked ticket. You'd probably have to use Marketplace solution (there are a few) to meet this requirement.

Just to add to @Tomislav Tobijas excellent answer, you could use forms to display additional fields via the portal, no additional apps from the Marketplace needed. I wrote about it in this article, Using Forms to display additional fields in the Portal.
