Instead of the screens asking for "Due:" I would like for it to say "Review" for the due date field. How is this changed?
Due Date is a system field, so you can't change the label/name of this field. If this change is very critical to you - can create a custom field named Review type date.
Of course, in the request type settings, you can rename all fields' display as they show to the customers, but that doesn't change the actual field name. Just hover over Display Name column and click edit.
