Dates in Jira

What is the relationship in Jira for the various dates 

Start date, end date and due date ? The name are self explonatary at first glance but how do they work in conjunction with the childs dates ? will end change if a child has greater than parent end dates ?

In my setup I saw this working once and did not work the other ?

What is the default setup and how was it designed to wrok ? Please advice

Are you using Cloud or Data Center?  Here are the default setup

In Cloud env:

Start/End Date - Those out of the box fields are associated with Roadmap feature (for next gen projects)  Typically, it is added to screens for EPIC issue type.

Due Date (system) - Due date is an intermediate milestone date.

In Data Center env:

Start/End Date - Since server version doesn't support next gen projects and the out of the box Roadmap feature, they are typically created as custom fields.

Due Date (system) - Due date is an intermediate milestone date.

 

NOTE - Due Date field manipulation can only be done by users with *Schedule Issue permission.  Typically by default - It is assigned to project's Administrators role members.

Lastly, in regards to your ask on child issues relationship on date roll-up.  I believe those are setup via customization and it is not out of the box.
