I want to know if it is possible to create a service, clients will send an email to my service desk and a ticket gets logged. I want to my clients to receive email on actions that are done to the ticket without my staff having to go and reply on the email. The client could be anyone.

Yes, creating a ServiceDesk project will help you in this case. You can set up your own email address. This helps your clients for creating a ticket without logging into your instance. Once the issue opened they can track the status of the issue using workflow status that we are configuring at the admin section.
There are many other configurations and add-ons which helps you in sending a customised message to the user.
