Can you create different flavours of SLA in the one service desk project?
I can see you can create SLAs for 1 type say for software where
critical = 4 hours business hours,
major = 8 business hours,
minor = 16 business hours
What if I want to have SLA for a particular software where the times are different to above. Is that possible?

It is possible.
When you create an SLA, you add goals, which are JQL queries. You can put all your conditions as goals.
