I need to know how to create cascading dropdown lists in JIRA Service Desk, The custom fields option is in JIRA not JIRA SD.
So you have you attempted to create a cascading custom field and then associate it to your JSD project? Custom fields is part of Core so you should be able to add to any project type, with the exception of Next-gen.

Actually, I am speaking about the " IT service desk" project which exists as an option only in next-gen projects, I have created one of them now and by nature service desk projects should have this feature.
What is your advice? given that the project is already active with customer requests on it.

The only options are to live with the limitation of NG or create a new Classic project, move all issues over. You should be able to do so with little disruptions to your customer. You can do during down time and remove the old portal project and replace with new using similar or same name and email.
