I want my external customers to be able to log issues or bugs they find via service desk, but I don't want to force them to register and log in to do so.
Is there an easy way an external customer can use service desk without having to log in?

It's possible to set a public customer portal, so anyone will be able to access and send requests, but this will also allow the customers to create their own accounts.
You will have to follow the steps below:
Go to the Project Settings > Customer permissions > Who can access the portal and send requests to "Project name"? > Anyone with an account on https://myinstance.atlassian.net > Save.
Then click on the option "To allow anyone to send requests, change the Global settings".
On this page, you must select the option as below:
Note that customers will be able to see all request types available in the project.
