Can I make a permission scheme from scratch?

I created a project and want to make sure that the customers assigned to my project only get to see my project and none of the other projects on the JIRA service desk. How do I do this? Thank you.

Customers only see the tickets they raised or may be the tickets raised by others in the same organisation.

You can however create your own permission scheme if you want. I prefer copying existing and modifying it.
