Does Atlassian offer a SourceTree site licence that can be used in a classroom setting?

I don't think, there is a special classroom license.

But there is an article on SourceTree License For Corporate Usage - maybe this can be applied on your use case

Also note that all SourceTree licenses are free. Most software that has a specific "education" license does so to provide a discount for educators and students.
