We are new to Atlas/Atlassian Home - Platform experiences, how can I add a custom status to Goals and Projects please in addition to the ones provided out of the box?

I don't think you can. There's a very tight integration with the project updates and goal updates pages where each status has its own color and filter. If you ask me these are the only statuses that you need for projects and goals. If you need more, link your projects to an epic in JIRA and use the statuses there to define/use more statuses.
Thanks Ian, appreciate it, however our Portfolio and Delivery Managers want a custom status or two that are not in our Jira Epics (which are linked to these projects)
They want the ability to have an In Review project status for example and we do not support this status in our portfolio epic workflows (for a good reason).
In fact our epic statuses do not align directly to the available atlas project statuses for the most part and we are good with that and in fact like that but we do want the ability to add custom statuses that our delivery managers can use to communicate to higher level stakeholders who are not interested in Epic statuses
