I've put the excerpt macro in place on Page 1, along with the excerpt include macro on another page (Page 2) in another space. When I edit the excerpt include macro on Page 2, I can see the parent page of Page 1, but I'm unable to tell it how to get to Page 1.
I've looked through a ton of Community posts, blog posts, and JIRA posts and the nearest explanation I can find is here:
But it doesn't tell me how to write the name of the child page I want it to include if it won't auto-populate.
Can someone help?

I'm a bit unclear on what you're trying to do here.
I've setup the following:
When I created the Parent Page 2, upon inserting the Excerpt Include Macro, I started typing the name of Child Page 1, and it had no problem finding that page. You do need to start typing the name of the page for it to auto-populate.
Can you confirm if I understood your issue correctly?

When I edit the Excerpt Include macro, the naming goes like this:
"SpaceA:Parent1Name:"
Then, the drop down says "Not Found" when I enter the second colon. Maybe I'm not supposed to use a colon? I'm not sure...

According to your example, the excerpt is on Space A's child page, and not the parent page.
So it would look like this:
{excerpt-include:SpaceA:Child Page 1}
In addition, when you type {Excerpt, Excerpt include macro should show up, and you should be able to just select the child page there. You do not need to involve the parent at all, just refer to the child page under the space.
