My Confluence is installed on ubuntu Virtual Machine in an ESXi server. Can I add another disk to the server and move the storage path of the attachments to the second disk?

Yes, absolutely, Confluence doesn't care where the files are physically, beyond a simple "here's the root of the directory you can keep the attachments". Install the new disk, copy the existing attachments directory on to it with all its content, and then either change the attachments setting in Confluence to the new one, or replace the directory on the old disk with a symbolic link to the new location.
