Currently I have two environments; prod and dev. The prod enviroment does not have internet access. The dev environments has internet access and is able to update the add-on using the market place function.  However I was wonder if there is a way I could extract only the updated add-on or all of the addons without you copying all the data and confluence/jira folders back over to prod environment.

As I would like to avoid the manual process of download and updating of each add-on.

Would anyone if it this is possible ?

You can grab add-ons from the marketplace directly.  Have a look at the dev environment and make a note of the *exact* version of the add-on you are happy with in there.

Now visit https://marketplace.atlassian.com , go find the add-on, make sure you're looking at the server version and click "versions".

Find the matching version and download it.

Now go to production <atlassian thing>, admin -> add-ons -> upload add-on, and feed it the file you just downloaded.

Thanks Nic,  but I'm hoping to  only extract the updated addon from the dev environment instead of manual down from the marketplace and upload it to the production add-on section.

Why?  That's probably the hardest way you can possibly do this.

If you use "upload add-on", the system has basic information about the add-on which it can use for maintenance.  If you install by hand, you've got no records, as well as spending far too much time on installing something in a totally unsupported way.

Please, do it properly.
