How can I cancel evaluation of Zen Foundation add-on as I use on-demand Confluence setup which is not compatible with the add-on?

If you log in on the my.atlassian.com account of either the main technical or main billing contact, you can disable the license from there.

I would recommend contacting the add-on developer, Stepstone Technologies Inc, they are available via support@stepstonetech.com.
