Why is so much fine tuning lost in the new editor in MS Edge?

Tables automatically take up the entire width of the screen.

I can adjust the whole table's width; however, I can't adjust column widths. They only automatically adjust when the table width changes.

I can't left-align tables to the left side of the page; it forces tables to the middle of the page.

The table editing menu refuses to stay open after I click it, which does not allow me to select anything.

There are several more issues.

How can this editor be made to function more agreeably?

I reverted the page, it defaulted to the new editor again, but now I can do the things I wanted to do. The menus remain visible for me to manipulate the table and columns.

Cool.

Now the issue is, why does every table, upon conversion, default to distributed column widths across the entire width of the screen. It's awful. I have to manually fix every single table?
