I made a list of hot keys and added the MacOS symbols next to the hot keys so new Mac users would be able to familiarize themselves with the symbols. My problem is, when I convert that document to a pdf the symbols disappear. I was wondering why this happens and if there is a way I can still have the symbols show up in the pdf?

I'd assume the font you're using does not support the mentioned characters. Maybe the information on this page here helps.
Alternativey you could also have a look at our Scroll PDF Exporter, which allows you to further customize your PDF exports - both for Confluence Cloud and Confluence Server. Using the graphical template designer you can easily upload your font, and use it for your styles without the need to know any CSS.

Could you tell us a bit more about how the PDF is used on Confluence? Is it embedded in a PDF macro or is this an issue with the file preview feature? It would also be useful to know if you use Server or Cloud.

Sorry, I wasn't very clear. I'm not adding any PDFs on Confluence. I experience this issue when I export the page as a PDF document so I can share it. To answer your other question, I use the web version of Confluence which I believe would be the Cloud.
