Recent navigation changes in Confluence are great, but not for everyone.

In my previous company - Emplifi, I deployed Scroll Sites (formerly known as Scroll Viewport) by K15t to create an internal only documentation and intranet sites for the same reason - declutter the UI and only present content that people actually need.
The site looked very much like this public version of the site: https://docs.emplifi.io/
The internal site was protected by our SSO so we could give SSO access also to our employees without a Confluence seat. The actual Confluence space stays private (no anonymous access required).
You can use Scroll Site with a single space or several spaces. In the latter case, each space will have it's own navigation tree, but all spaces will have a single common landing page.

Natively, you probably won't be able to achieve this. There are some related feature requests that you might want to take a look at:
And yeah, breadcrumbs are now only visible in the sidebar and are hidden by default for a cleaner interface. Users must click the down arrow to expand and see the full hierarchy.
As for some third-party solutions, you could maybe try “Navigation Menus for Confluence" and “Refined for Confluence” 👀
