I would like to watch all current and future pages under a certain page without watching the entire space. How would I do that without watching each individual page
You will not be able to watch the spaces without browsing the page.
If it is a server instance there is a third-party Notifications-ScriptRunner Confluence add-on I would suggest you have a look at it which may helpful for you.
