Remove Labels and Add Labels Based on Script

On page create/update I'd like to remove all existing labels & then add a label(s) from a variable(s) from a script.

The script is running through a table to parse dates & add # days to certain dates to generate new date (review due etc). 

I'd like to utilize the midori archiving plugin that leverages labels such as expire-single-yy/mm/dd and if possible generate this automatically via script.

Any ideas are welcomed.
