After some time away due to personal reasons, I received an email deactivating my Confluence account, but I didn't see it. Is there any way to recover this data? The deletion email was sent on December 25th.

You need to raise a support request on this, and choose the billing option.

For now I have asked for assistance of an Atlassian employee looking on the community, it can take up to 48 hours fro them to respond on this request.

Since we don't have the site URL with us, I suggest you to raise a support ticket with our billing team directly here https://www.atlassian.com/company/contact/purchasing-licensing#/ and they should be able to help you with the reactivation of the app.

sorry to hear you've lost access to your Confluence site. I have flagged your question for Atlassian Support so that a Support Engineer can look into this.
If you're still able to, you could also open a support ticket with Atlassian: http://getsupport.atlassian.com
