I recently created a JIRA Service Management space (Team Managed). I would like to use Organizations field to categorize requests based on customers. I added multiple Organizations under JIRA Service Management Settings.
Now when I create JIRA Issues in this space, I am unable to populate the Organizations field and all I see is "No Matches found" when I try populating the Organizations field.

In order to use organizations you created under the App settings you first have to import/add them to the space. You do this by going to Customers > Organizations and click on Add organizations. This should allow you to select existing ones.

You don't need to go into Space Settings to find this "Customers" option. You should see Customers in the list of space options in the navigation panel on the left.
When you click that you should get a screen with two tabs; Customers and Organizations.
The Organizations tab is where you add the organizations to the Space.

OMG. Getting used to the new JIRA UI has been a nightmare so far. Thank you!! It was staring at me all this while.
This did it. I am now able to use the organizations that I have added in JSM settings.

I do not see the Customer tab in JIRA Service Space settings. Looks like there is something I am missing.
