New editing experience - How do I make that a default?

How do I make the new editing experience a default vs. an option when I click 'C' to create a new page?

Welcome to Community! It's nice to meet you.

This new experience is being slowly rolled out to instances and so the process to roll out the new experience to an entire instance can differ. 

My recommendation is to contact the Cloud Support team directly. This will allow them access to your instance and they will be able to help you with that request.
