Could you please advise me as to how to insert our company logo into one of the Global templates on confluence

While this is currently not possible, and a known issue,  there is a workaround.

The issue mentions there is a workaround that some people are using:  Include your logo on a page inside an Excerpt macro, then insert the Include Excerpt macro on the template.
