I have created a confluence page with embedded videos, however, it's not possible to expand the video in the page. Is there a way to allow for video to be maximized on the screen?

You can set the size when editing the embedded video. in this example, I set the video to 777 x 437. When not in edit mode, you have the option to watch it as the defined size or in max screen size.  Other than using browser controls like ctrl+/- I don't think you can resize it.
