How and where could I define, that from a global template in Confluence, not a page but a live doc should be created?

Unfortunately, you cannot set a page template as a live doc.
However, one option would be to create an automation rule that automatically converts a page created from your template, for example based on a label. This would require using an undocumented function via the REST API, as described in this support topic:

That said, the easiest approach is to manually convert the page once it has been created: click on the three dots in the top right corner, select “Convert,” and then choose “Live doc.”
