I have set the page order via the Reorder option. However, when I edit a certain page it gets moved to the top or the bottom of the page tree without me doing anything. Is there an option to lock the page order and prevent this from happening?

@Jovana Moc can you please explain the specific steps you are taking that cause the reorder to happen? Are you just updating page content and saving it? Are you changing the page name? What type of updates are causing it to reorder?
I am mostly converting the pages to the new editor, making some changes and saving them. I have not changed the titles, only added the Child Pages macro and some text.

@Jovana Moc I am not able to replicate but I also no longer have any pages to convert to the new editor. I would suggest submitting a support request. I am wondering if when the editor is updated if it is creating a new page. This is the only thing I can think of that would impact the order of the pages that you have created.
