Welcome to using Confluence. A few things you need to be aware of with Confluence Cloud vs Server are they are not the same parity level. Confluence Server does not share feature parity with Confluence Cloud. Confluence Cloud does have some functionality that is not presently available in server.
One of those functions that are not available in cloud is Stylesheets:
Look and feel
Layouts
Custom CSS
On Atlassian Cloud, Confluence uses a custom theme, which cannot be modified or updated using custom HTML or CSS (not supported). For more information on custom themes in Confluence Cloud, refer to Working with Themes . Confluence Cloud Developer community: You can also create your own theme for Confluence Cloud. Check out the Theme page in our Confluence Cloud Developer documentation.

With all this said, you will not be able to (as of the date of this post) edit your global stylesheets. If you would like to request this as a feature you are welcome to do so, Create feature request.
