How to create a list with options to choose in confluence page.

I am trying to create a dropdown list on confluence page editor to choose / select a value but dont see any option.

In many videos people are typing a $ sign or inserting variable into the page but that option is not available.

Also, How can I place a small calendar icon to choose the date and time against a label. Is there a way to auto update  a field when a page is edited.
