When I'm writting an article in Confluence, certain characters get replaced by others. For example, if I write an ellipsis "...", it gets replaced by this "…", which looks super similar but if you highlight it with your cursor you'll see that it is a single character. This messes things up for me when copying and pasting from Confluence to other places that don't have support for those characters.
I know Google Docs has a place where you can edit these kinds of behaviours, and it calls them "Substitutions". Is there a similar option for Confluence?

Are you saying that you type 3 periods in a row and Confluence (or your browser) automatically converts them to an ellipsis character?
When this happens in relation to entering text that is converted automatically to an emoji, the advice is generally that immediately pressing Ctrl+z undoes the conversion. Can you try this to see if it works in the case of the ellipsis?
I don't know of anywhere in Confluence that you can specify that such substitutions not be made. (This does not mean that there isn't a place.)
It does work, and it reverts it back to the original 3 periods.
It would be great if I could find a solution that wouldn't require an extra action, since this is a bit cumbersome (and it's not just the 3 periods, but other symbols as well).
I've found other questions on the site that complain about similar things, so it appears that there's no solution to this atm.
