Is there any possibility to prevent overwriting an embedded Excel-File through several Users ?

Out of the box there are no possibilities to do that.
There ist the Lockpoint Plugin, you can install. It locks and unlocks Confluence attachments for exclusive editing and controlled change management

This depends on the functionality of the excel table. Confluence can't calc sum / avg / min / max etc. out of the box. Again, there would be multiple plugins.
If you have just a normal table with text, you should be able to copy paste the table from excel. There is no "import" function of an excel file.

So yes, the table includes only text, and i want to copy the table on a confluence page in a confluence table.
1. when i easily copy the whole table in the page, it Looks confusing
2. when i create a table the maximum is 15 x 20 ?! and another Problem is, i only can paste the Excel table then in one cell?!

This is tru, for the first creation, you are limited to 15x20. But you have the possibilities to extend the table as far and as long as you want.
Example in pictures.
This is the excel -> mark all and copy
Paste the table in a empty page. Do not insert a table manually first.

So, but i want edit the table and possibly sort it.. but the table is only a Picture than...
