We have global templates which we would like to archive and maybe use again in the future. We do not want users to see these templates when creating Content?

You can disable the template.
To disable a template or blueprint across the entire Confluence site:
- Choose the cog icon
, then choose General Configuration
- Choose Global Templates and Blueprints.
- Choose Disable next to the template, page blueprint or space blueprint you wish to disable.
Administrators can re-enable these templates and blueprints at any time.

The disable option is not available on the custom global templates we created.

That's odd.
Can you tell me what version of Confluence you're using, confirm that you are a Confluence administrator, and show me what the screen looks like without the ability to disable?
