We are creating an approval workflow referencing the following articles:
Once approved, the workflow is to amend page restrictions to allow everyone to view the page but enable the approvers to edit the page, i.e. "Anyone in this space can view, only some can edit".
However, it seems that the Set Page Restrictions Actions are not capable of making such settings. Am I correct?

The way I am reading this page https://docs.appfox.io/confluence-workflows/set-permissions is that you can configure who can edit or view a page but by indicating single users or groups.
I haven't understood what you want to achieve.
You have a workflow where the page should be approved.
After the page is approved, who would you like to be able to edit or view? Could you create a group of approvers and use the 'set page restrictions' to allow only the approvers group to edit in the workflow status?

We intend that after the page is approved, only the approvers will have the right to edit it, but everyone else will be allowed to view it.

The AppFox support team provided a solution: In the final "Set Page Restrictions Actions", we will need to add the approver group to "Groups who can Edit" and the "confluence-user" group to "Groups who can View".
