With Ubuntu 18.04 LTS just around the corner (official release date:  April 26, 2018), I'd be tempted to go with that.  Since it's an LTS version ("Long Term Support"), it will remain supported with security patches for 5 years.

The version of Git that comes with Centos7 is pretty old and may soon become too old to run Bitbucket.

Whatever supported platform your organisation wants to run it on.

Supported narrows it down to "Linux or Windows", but you should still choose whichever one you know better.

Given equal levels of knowledge and expertise on both though, use Linux.  Always.  It's faster, cheaper, easier and better than Windows in every respect (and that applies for almost all applications, not just the Atlassian stack)
