There was a UI update for which quick actions are available under a comment. Quickly creating a task as one of them. This is now hidden behind the three dot menu all the way on the right.
I would like to either
- have the ability to customise which buttons we see as quick actions for my organisation
- or for the task button to be added back in it's original location

Hello and welcome to Atlassian Community @mrtsven
I understand the workflow impact. Tasks differ from comments in Bitbucket; they are for review items needing action. Teams can even require all PR tasks be completed before merging. A shortcut may help in the meantime:
If the text you want is in the comment, highlight it and select Create task. Bitbucket supports creating a contextual task directly from selected comment text.
Submit it through Give feedback in Bitbucket.
Configurable quick actions make sense as "quick" depends on the team's review workflow. A team using tasks for every required code change will use Create task more frequently than Like.
Also, please understand that Community Forums are good for sharing experiences and troubleshooting, but UI requests or feedback must go through official channels, either by opening a ticket or giving it directly inside the app.

The point is, the "create task" button used to be inside the comment box, but nowt it's gone. You need to first create the comment, and then only the "create task" button becomes available.
