Is it possible to also store the job configuration in bitbucket / stash and use that definition to drive bamboo?

Unfortunately this is not available yet: configuration and infrastructure as code is still one of the notoriously weak areas of Bamboo and subject to several of the most highly voted feature requests accordingly - please watch and vote for the following issues to further guide Atlassian's roadmap in this regard:
