Single plan with multiple repos

can i have a plan that will build and deploy multiple projects from different repos?

Yes you can have a build plan with multiple source repositories. Pretty much anything after that is up to what you do with the tasks.

How do I control the checkout? Is it possible to checkout only specific repo where change actually happened?
