Creating automation across 2 projects

Is there a way to set up automation across 2 different projects?

Every time a ticket in project A hits a certain status, I want a new ticket to be made in project B.

The reason is because we don't want everyone in project B to have access to project A.

Yes, that is possible and is fairly easy to set up. It would look something like this:
