We have a merger coming. Is it cleaner to move the whole site or each product separately?

I need to move a JSM product into our org for licensing purposes.  They have an active Opsgenie site that cannot be merged yet due to the missing features.

Is the migration process much different for one product vs whole site?  Only the Copy Production Data is available?

As far as I have seen, the migration process is product by product.  You can use Transfer organization to move all products to a new org site and delete the old organization.  

As far as Opsgenie goes, you could contact Atlassian support and have the the Opsgenie site pointing to the migrated JSM project.
