In addition to seeing the progress of an item based on it's resolution, is there a way to view progress by status field? (for example, what items are 'in test')

Yes there is! If you check out theimage2016-1-5 17:10:36.pnggear icon in the corner, you can add/remove select fields. If you scroll down you can see Issue Status is an option.
But it dooes not affect the progress at all, right? is there a chance to use the issue status as an indicator for the progress? otherwise all issues will used for the future planning whether finished or not.
