Can one change an Advanced Roadmap Plan Issue column to display Epic name instead of Epic Summary?

I have a client that would rather see Epic name in the plan which is shorter than Epic summary.  We are doing PI Planning and want the screen real estate to show more of the timeline.  

Yes, all the fields are all hidden so that column is narrow.

The Epic name is getting fazed out right now, so I would not advice to go down that path.

You could save your Epic name as the summary, and is you need to have a more detailed name, create a custom field to story it. (So swap Summary new CF, and swap Epic name to summary).
