Trello newbie here.
I want to upload my list of 250 customers in a dropdown list that can be accessible in 2-3 different Boards.
I see I can create dropdown in a custom field - but that would only be in 1 board and would take long to upload 250 names.
Any way to create a "global dropdown"?

There are not global dropdowns. This is similar to your issue https://community.atlassian.com/t5/Trello-questions/Using-Butler-to-copy-Custom-Fields-from-one-board-to-others-on-a/qaq-p/1271829 Looks like they used an overview card to solve the issue.
