We have a socks proxy between our client machines and server assets which includes bitbucket. Is there a proxy configuration in sourcetree we can leverage to connect over the socks5 proxy protocol?

Sourcetree does not include any proxy configuration support in the UI. You should be able to manually edit your global config to do so per this StackOverflow answer. ST respects your global and per repository settings as it uses your default command line environment to perform actions.
