When I installed the software, part of the setup was not done correctly. I want to completely uninstall the software and start over. When I do this, it automatically logs me back in to sourcetree with the previous setup. I also tried to remove the appdata files and uninstall, but nothing is working.

Welcome to Atlassian Community.
To completely wipe Sourcetree you have to remove the Sourcetree folder under appdata\local\Atlassian and the Sourcetree folder under local. You should then be able to reinstall it. If you just want to redo the initial setup you just have to remove the Sourcetree folders under Atlassian. See How to Wipe SourceTree Preferences for more information.
Thanks for the quick response. I have done these steps mulitple times and it still directly skips the installation and logs me in when I reinstall with the previous installation already applied.
