How do you configure the editor in the latest sourcetree for mac (2.6.3)?

I work in Atom. Until the latest update, double-clicking a file opened it in Atom.  Since the latest update, double-clicking opens Sublime.

I cannot see in Preferences where to change that.  Was it ever there?

The file type binding is handled at the OS level. You should be able to specify it by going to the "Open With…" submenu in the contextual menu and changing.
